5 5/8" WA Handled Honesuki
This is one of the more unique honesuki kitchen knives we have done recently. This is made in 52100 High Carbon Steel with Buffed Forge Finish and a Stabilized Mesquite handle, with hidden tang construction.
Note: This knife is made with 52100 High Carbon Steel and will rust if it is left wet, dirty, or in any moist area. It must be cleaned and dried immediately after use. It will develop a patina in time and with cutting. If you like shiny knives, or do not wish to worry about the care of this knife, please consider a Stainless Steel knife. Chef's love high carbon blades because they sharpen easier and faster, and take a superior edge. Having said that, they are like cast iron and need a little more attention.
